The Best Vegan Cookies Ever!

Who doesn’t love cookies? Especially Chewy Vegan Oatmeal Chocolate Chip Cookies? We do!! We make a double batch of these cookies every second weekend. I have to hide them in the freezer so they will last longer. When my husband asks, “Hey Sweetheart, didn’t you make cookies Saturday?” I say, uhh, yeah, I guess they’re all gone already! (snicker). I gotta save them for the kids’ lunches right

Easy Vegan Cookie Recipe

So this recipe is very easy and versatile. I’ve adapted and changed a few things so you can try it too. Sometimes I have no coconut, so I just omit it, and possibly add 1/4 cup of peanut butter powder, cause I have it on hand. Try adding your favorite cookie add-ons.

I love to add ground flax seeds and hemp hearts to give these yummy cookies a bit of a nutrition boost and the kids don’t even know. I made these with white flour and whole wheat flour, and you can’t even tell the difference!  So better to use whole wheat flour for extra nutrition.

Chocolate Chip Cookies

What can I add to my cookie dough?

  • Dried Fruits: Dried fruits are easy to add, such as cranberries or raisins. It’s not necessary, but you can soak them in hot water for 30 minutes before adding. This will make sure they don’t take moisture away from your cookie dough, and will make them sweeter.
  • Cocoa: If you want to make this a double chocolate cookie, try adding ¼ cup cocoa powder. But be sure to check that the cookie dough is not too dry when mixing. It should stick together but not be gooey.
  • Spices: Although a recipe might give you exact amounts for nutmeg and ground ginger, add what your tastebuds like. Since there are no eggs to worry about, test out your cookie dough before baking to make sure it has the flavor you like.
  • Nuts: Add your favorite nuts to the recipe. I like walnuts or almonds, or even peanuts. Extra protein is always a plus! Make sure to give these a rough chop, especially the almonds as they are a harder nut.
  • Flax seeds

Chewy Vegan Oatmeal Chocolate Chip Cookies

These are our family favorite chewy cookies! They are packed with some healthy oats and seeds, so I feel half good about the kids eating these as opposed to bought cookies!

Equipment

  • oven
  • mixer (not mandatory)

Ingredients
  

  • 3 cups rolled oats
  • 2 cups whole wheat flour
  • 2 cups dried coconut unsweetened is fine
  • 1/4 cup ground flax seeds
  • 1/4 cup hemp seeds
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cup brown sugar
  • 1 cup vegan butter
  • 2 tsp vanilla
  • 1/3 cup vegan milk add a bit more if batter is too dry and doesn't easilly form a ball when rolling up cookies.
  • 1/3 cup vegan chocolate chips the chocolate chips at Costco are accidentally vegan!

Instructions
 

  • Cream butter and sugar
  • Mix all dry ingredients together, then add to butter mixture
  • add milk. add more milk as needed if batter is too hard to mix, it should be easy to make balls, and not too sticky and messy that you can't roll it in your hands.
  • Add chocolate chips. Mix till you can form a ball that stays together, but not too wet. Transfer balls to lined cookie sheet and press them down. They don't spread much, so they will pretty much stay the shape you make them.
  • Bake at 350F for 12-15 minutes. Watch your first batch as ovens vary. Put on your timer, so you don't burn these little gems. They are lightly browned on the bottom.
  • transfer to cooling rack for 10 minutes to cool. Enjoy!
