Following are a few categories of our weekly meals and a few links to our favorite recipes!

 

Pasta

My kids love eating pasta! So my go to meals are macaroni and vegan cheese. Okay, so click here for our favorite cheese sauce recipe. It’s pure gold!!! We make it once a week, and when we’re out, I whip up a new batch. It has many uses other than macaroni and cheese I often put it on my roasted potatoes. Yum!

Creamy garlic linguini is another fast growing favorite. It is a rich and filling meal. Serve it with garlic toast and a salad, and it’s a super satisfying meal! 

Spaghetti and vegan meatballs. Just boil your favorite spaghetti, open up a jar of vegan spaghetti sauce and roast up some vegan meatballs in the toaster oven. (fast and easy)

Vegan Lasagna. An all time favorite, with so many varieties. Choose your favorite vegetables and add them in!

Processed foods…

I don’t usually recommend vegan processed foods, but sometimes, the kids do eat them. We buy vegan cheese shreds to put on individual pizzas or make grill cheese. They also, on occasion, indulge in vegan “chicken” burgers and vegan meatballs. I am slowly removing these form their diet, as I am encouraging them to eat more whole plant foods. These are occasional treats. Here are their favorites!

Tacos

My kids enjoy taco chips with cheese sauce, homemade guacamole or salsa. But who doesn’t right? Have a Mexican night and make tortilla wraps. This recipe is wonderful for taco meat! Make your own pico de gallo. Here is the PICO KING I follow!

Sushi

How about veggie sushi? To speed things up, I make the sushi rice the night before. Then just julienne some cucumbers, carrots, avocados and roll them up in a nori roasted seaweed sheet! For a very affordable sushi gift set, click here! It’s perfect for beginners and makes a sweet gift too!

Get kids involved

Get your kids involved in picking out what recipe to try next and helping out with certain tasks. (washing veggies, stirring pasta pot, blending sauces or smoothies…). When kids help, they are more likely to try new dishes as they have had a hand in it! (no pun intended…)
